IMG_8239Mangos are the bomb diggity. In fact, I just had to pause to grab one out of the fridge to cut up and eat. They’re so flavorful and act as a great compliment to chicken. Mondays are always super long and I barely have any time to make something to eat. I often opt for quick meals on Monday nights or something in the crockpot that can just be ready when I get home. Smells of mangos and taco seasoning wafted through the air right as I walked through the door.


Serves: 4

Total Time: 4 hours, 15 minutes


Gluten free, vegan, vegetarian, dairy free, soy free


Ingredients

1.5 lbs Boneless Organic Chicken breasts sliced thin

1 mango, peeled and chopped into chunks

½ cup red onion, diced

½ cup red bell pepper

3 drops lime essential oil or juice of 2 limes

¼ cup extra virgin olive oil

4 scallions

1.5 Tablespoons of Taco seasoning (Make your own with recipe below)


Taco Seasoning Recipe

2 Tablespoons chili powder

2 teaspoons ground cumin

1 ½ teaspoons garlic powder

½ teaspoons onion powder

1 teaspoons dried oregano

¼ teaspoons paprika

1 teaspoons sea salt

¼-½ teaspoons cayenne pepper (optional)


Directions

  1. Place everything in crockpot and drizzle with olive oil. Mix together so the seasoning is evenly coated.
  2. Heat on low for 6.5 hours or 4 hours on high, until chicken is cooked thoroughly.
  3. Top with chopped scallions.
  4. Enjoy!
