Crockpot Mango Chicken
Mangos are the bomb diggity. In fact, I just had to pause to grab one out of the fridge to cut up and eat. They’re so flavorful and act as a great compliment to chicken. Mondays are always super long and I barely have any time to make something to eat. I often opt for quick meals on Monday nights or something in the crockpot that can just be ready when I get home. Smells of mangos and taco seasoning wafted through the air right as I walked through the door.

Total Time: 4 hours, 15 minutes
1.5 lbs Boneless Organic Chicken breasts sliced thin
1 mango, peeled and chopped into chunks
½ cup red onion, diced
½ cup red bell pepper
3 drops lime essential oil or juice of 2 limes
¼ cup extra virgin olive oil
1.5 Tablespoons of Taco seasoning (Make your own with recipe below)
Taco Seasoning Recipe
2 Tablespoons chili powder
2 teaspoons ground cumin
1 ½ teaspoons garlic powder
½ teaspoons onion powder
1 teaspoons dried oregano
¼ teaspoons paprika
1 teaspoons sea salt
¼-½ teaspoons cayenne pepper (optional)
- Place everything in crockpot and drizzle with olive oil. Mix together so the seasoning is evenly coated.
- Heat on low for 6.5 hours or 4 hours on high, until chicken is cooked thoroughly.
- Top with chopped scallions.
