5 Quick and Easy Breakfast Ideas


One of my health coaching clients is doing an experiment to try a bunch of different breakfast options and observe how her body feels. Breakfast is my favorite meal of the day! You can eat breakfast food for pretty much any meal.

I like to switch it up because I get pretty bored of having the same thing every day. If it can be quick, it puts my mornings even more at ease. Meal prepping is key for making the mornings easier. So what is in my repertoire of breakfast options?


 IMG_3849Oatmeal is such an easy go-to. I will boil the almond milk or water while I’m getting ready and then throw in the oats. Make sure you get rolled oats. They are unprocessed. Instant oatmeal is a processed carbohydrate. This makes your blood sugar levels spike and then crash within two hours of ingestion. I add in chia seeds and hemp seeds to increase my protein levels. When I was a kid, I always used brown sugar to sweeten the oatmeal. Now, I throw in a few banana slices and some cinnamon. You can even make your oats overnight by throwing them in a jar with almond milk!

Egg Cups

egg cupsThese are great! You’ll get your scrambled egg fix and have it ready to go right in the morning. All you have to do is heat it up. I make a muffin size tin of them and throw them in the refrigerator until the morning I want to eat them. Experiment with different veggies. I usually do tomatoes, a leafy green (like kale or spinach), onions, and peppers.

Chia Pudding

raspberry chia puddingAnother overnight meal you can have ready right when you wake up! Chia seeds are packed with protein and they expand when they are put in liquid. They create a pudding-like consistency. You can flavor the chia pudding with just honey or a fruit. Raspberry is my favorite but blueberry is wonderful as well.

Smoothie Bowls

red, white and blue smoothie bowlIf you follow me on Snapchat in the summer, you will see an influx of decorated smoothie bowls filled with deliciousness. It’s a bit of an art experiment and meditation while I make these. I’ve even done one for the 4th of July! Stock up on fresh fruit when it is in season or on sale and throw it in the freezer for later use. Sometimes the farmer’s market will give you flights of fruit (with about 12 cartons) that you can buy it at a discounted rate.

Sweet Potato Parfait

sweet potato parfaitI made this recipe for the first time a few months ago and I have been craving it ever since! It’s pretty easy if you cook the sweet potato in advance. You can layer it into six jars and grab it out of the fridge the next morning, sprinkle the granola on top, and enjoy! I like to add the raspberries for more flavor.
