Black Bean Tacos with Goji Berry Salsa
Black beans are such an easy thing to have on hand so I use them in multiple recipes. They can be made into black bean veggie burgers, hummus, or these delicious tacos. Goji berry powder is a totally different ball game. It has a fruity taste and it’s packed with so many benefits. Goji berries are one of the most nutrient rich foods on earth. Goji berry powder is filled with a ton of protein, essential amino acids, rich in vitamin A (beta-carotene). It pairs very nicely with the lime juice in the salsa for these tacos.

Ingredients
2 cups blackberries, coarsely chopped
2 tbsp fresh lime juice
2 tsp goji powder
½ large red onion, minced, divided
1 tbsp olive oil
1 15-oz BPA-free can unsalted black beans or 1 cup previously cooked black beans
¼ tsp chipotle powder
¼ tsp sea salt
8 6-inch corn tortillas, warmed (or 8 large romaine leaves)
1 green bell pepper, sliced into matchsticks
¼ cup fresh cilantro leaves
¼ cup unsalted almonds, finely chopped
Directions
- Combine the blackberries, lime juice, goji berry powder and 2 Tbsp onion in a small bowl. Cover and refrigerate this until you’re ready to serve the tacos.
- Heat the oil in a small saucepan on medium. Add onions and sauté for 7-8 minutes, until onion is soft. Stir occasionally. Add beans, chipotle powder and salt. Reduce heat to medium-low and simmer for 15 minutes.
- Scoop the beans to the center of the tortilla and top with bell pepper, salsa, almonds and cilantro.
