Black Bean Tacos with Goji Berry Salsa

claire

IMG_3105Black beans are such an easy thing to have on hand so I use them in multiple recipes. They can be made into black bean veggie burgers, hummus, or these delicious tacos. Goji berry powder is a totally different ball game. It has a fruity taste and it’s packed with so many benefits. Goji berries are one of the most nutrient rich foods on earth. Goji berry powder is filled with a ton of protein, essential amino acids, rich in vitamin A (beta-carotene). It pairs very nicely with the lime juice in the salsa for these tacos.
