img_2150When I was in college, my good friend Amber made this delicious chimichurri. Every time she would make it, I would try to snag a bite out of the food processor. It’s a great addition to your meat or fish! You can even toss some potatoes in this sauce.

Now, I love to cook but I really am pressed for time most days. I like to cook in bulk and meal prep. This is a delectable sauce you can use throughout the week on multiple dishes.

Serves: 6

Hands on time: 10 minutes

Total time: 15 minutes


½ cup fresh parsley

½ cup fresh cilantro

3 cloves garlic

½ red onion

2 tsp lime juice

¼ tsp black pepper

½ tsp red pepper flakes

½ tsp salt

⅓ cup olive oil

2 tbsp apple cider vinegar (you can also use red wine vinegar instead)


  1. Peel garlic and let sit on counter for 5 minutes.
  2. Place everything into the food processor and pulse until mixture is well combined but still chunky.
  3. Serve over fish, meat, potatoes or experiment with something else of your choosing.
