Goji Berry, Cashew Butter, Oat Energy Balls
Goji berries are such a fun treat to add into your diet. Goji berries contain one of the highest antioxidant levels of any food on the planet! They create a sense of grounding energy and mental well being. You can eat them by themselves but they’re really delicious in energy balls. You can use any type of nut butter but the cashew was fantastic! I get my goji berries from Imlak’esh Organics. Ingredients
1 cup rolled oats
⅓ cup almonds, chopped
⅓ cup unsweetened shredded coconut
1 Tbsp ground flaxseed
½ cup cashew butter (or other nut butter)
¼ cup maple syrup (or honey)
1 tbsp. Chia seeds
⅓ cup dried goji berries (from Imlak’esh Organics; “RIDGE10” at checkout for 10% off)
Directions
- Soften nut butter to room temperature or place in a double boiler over the stove on low-medium heat.
- In a large bowl, mix together all the ingredients.
- Roll into bite-sized balls.
- Store in the refrigerator with an air-tight lid for up to one week.
- Enjoy!
