Burst of Sunshine Mango Smoothie Bowl
What a fun way to add some sunshine to your breakfast? I love the yellow color of the mango and the mango provides many health benefits. Mangos are said to have antioxidants that protect against colon, breast, leukemia, and prostate cancers. Mangos help clear the skin, improve eye health, and lowers cholesterol. The cauliflower is a sneaky addition that doesn’t even taste but adds fiber to the diet. You can use raspberries, blueberries, or experiment with other toppings!

6 tbs plain unsweetened almond milk
1 ½ cups frozen mango chunks (about 1 mango)
½ cup chilled cooked cauliflower
2 tbsp coconut butter
1 pitted date
¼ tsp ground turmeric, optional
¼ cup raspberries
1 tbsp unsweetened shredded coconut
1 tbsp toasted sliced unsalted almonds
- Mix mango, almond milk, cauliflower, coconut oil, dates, and turmeric in blender.
- Pour in bowl.
- Sprinkle toppings however you like!
