Nopales and Ground Beef Burrito Bowl
I had my first experience with nopales. They’re these cactus pads that taste sort of like a green pepper. One of my yoga students mentioned them to me so I swung into this darling Mexican grocery store next to Mirepoix Wellness Studio after one of my classes. I was craving a little burrito bowl and this was the perfect fix. If you’re curious about preparing nopales or what they do, read this post! I forgot the cilantro for the picture but added it after and it was a must!

Ingredients
1 can diced organic tomatoes
3 garlic cloves
2 Tbsp olive oil
1 lb. grass fed organic ground beef
½ large white onion, diced
2 Nopales, chopped and cooked
1 tsp oregano
¼ cup cilantro, chopped
Salt and pepper to taste
2 Tbsp chili powder
Directions
- Prepare the nopales.
- Over medium-high heat in a large pan, saute the onions until translucent, about 2 minutes.
- Add the meat and cook until brown then add the garlic cloves.
- Pour diced tomatoes into the pan with the nopales, oregano, chili powder, salt and pepper.
- Serve atop cooked quinoa. Top with cilantro.
- Enjoy!
