Pumpkin, Oat, Sacha Inchi Seed, Chocolate Energy Balls
Sacha Inchi seeds have been my ingredient of choice over the last week or two. They’re so interesting and have the perfect nutty flavor. If you hang out with me often, you’ll know that I always am bringing around random foods for people to try. So if you’ve been with me in the last two weeks, I’m sure you’ve popped your Sacha Inchi cherry. Imlak’esh Organics ethically sourced and hand-harvested these seeds from the rainforests in Southeast Asia. Sacha Inchi seeds are a superfood that grow on vines that empower remote native villages. Ingredients
1 cup rolled-oats
1 cup sacha inchi seeds
¼ cup pumpkin puree
3 Tbsp. honey
1 tsp. pumpkin pie spice
2 Tbsp. Cacao Nibs
Pinch of salt
Splash of vanilla extract
½ tsp Moon Juice Adaptogens (What are adaptogens?) *optional*
Directions
- Pulse Sacha Inchi seeds and rolled oats in a food processor until seeds are ground.
- Add pumpkin puree, honey, pumpkin pie spice, adaptogens cacao nibs, salt, and vanilla. Mix until combined.
- Add more honey and puree if the mixture looks dry.
- Make tablespoon size balls with the mixture. Store in the refrigerator.
- Enjoy!
