Quinoa, tomato, avocado salad.

1 cup Quinoa
½ cup Water
1 Ripe Avocado
½ Onion
1 large red Tomato
1 Apple
2 Celery stalks
½ Lemon


  1. Boil water.
  2. Stir in Quinoa covered and simmer until all water has been soaked in.
  3. Chop veggies.
  4. Combine quinoa and all other ingredients in a small dish.
  5. Refrigerate and serve cold.
