Quinoa, tomato, avocado salad.

Quinoa is an awesome dish packed with nutrients. It is technically a seed of a herbaceous plant, not a grain. It supplies a significant amount of protein, which is very rare for a food that is prepared like a grain. The protein is a complete protein, meaning that it contains the nine essential amino acids. This is a great option for vegans who need to fulfill their protein needs. There are many different types of quinoa in various colors including red, orange, pink, purple, and black. The red quinoa in this dish has a crunchy texture, making it great for creating healthy quinoa salads!
