Raspberry Chia Pudding

Raspberries are a powerful antioxidant and rich in dietary fiber. The phytonutrient, elegiac acid found in raspberries is helpful for preventing unwanted damage to cell membranes. Raspberries are great for promoting heart health because they reduce the oxidation of LDL (“bad” cholesterol). They are an amazing source of vitamin C, manganese, and a good source of copper.

Ingredients
1 cup unsweetened almond milk
1 cup raspberries or any other berry
3 tbs chia seeds
½ tsp vanilla
½ tsp honey
Topping:
Nut butter (peanut, almond, etc.)
Pomegranate seeds
Directions
- In a small bowl, mash up the raspberries using a fork.
- Add the raspberries, almond milk, chia seeds, vanilla, and honey together in a mason jar.
- Let sit in the refrigerator for at least 30 minutes or overnight.
- Add the nut butter and pomegranate seeds on top for a nice balance of the sweet and tangy fruit.
