IMG_4557Breakfast is the most important meal of the day so I’ve really been trying to make it a priority to sit down and eat my breakfast with joy and ease in the morning. I used to be so rushed. I would attribute that to hitting the snooze multiple times thinking that I could catch a few extra zzz’s. When I get up and get started, my mornings have been one of the greatest parts about my routine.


This breakfast is packed with protein and it’s so easy to make. I prep a bunch of the ingredients in advance such as the quinoa and baked sweet potatoes. When the morning comes around, all I have to do is toss my eggs in the boiling water and poach them. Poaching eggs is super easy. All you have to do is boil water, add about 1 tablespoon of vinegar and slowly drop the egg in. It works best if you put the egg in a small sauce bowl and pour it in. You can also purchase an egg poacher if you really want to make it easy.

Hands-on time: 10 minutes

Total Time: 1 hour, 10 minutes (if you haven’t meal prepped)


Gluten free, vegetarian, dairy free


Ingredients

¼ cup cooked quinoa

½ small cooked sweet potato, diced

¼ cup spinach

1-2 eggs

½ avocado

2-3 slices smoked salmon

1 tsp paprika

Salt and pepper to taste


Directions

  1. Boil water and add vinegar. Drop egg in and poach for 2-3 minutes.
  2. Sauté spinach in olive oil or any other neutral oil on low heat until wilted, about 2 minutes.
  3. Place cooked quinoa, and cooked sweet potatoes in bowl. You can heat these up on the skillet as well! Add spinach.
  4. Top with poached egg, sliced avocado, and smoked salmon.
  5. Sprinkle a little paprika, salt and pepper to taste.
  6. Enjoy!
