Superfood Banana Split
I love this place called Infiniteus Rocks and Juice in Wicker Park in Chicago. They have the best juice and a sweet rock shop in the back. They also make pretty wicked snacks. They make this banana split dish with superfoods. After having it, I went home in an attempt to make my own.
I’ve been making banana splits since I was 10. My dad owns a little old fashioned Dairy Queen and let me tell you, crafting up a good b-split is a skill I have definitely mastered. It’s all in the way you cut the banana. My dad taught me a pretty good trick in which you cut the ends of the banana on the top and the bottom almost the entire way through. This part of the peel then becomes the two handles for peeling the banana. It leaves two strips of the peel on the right and left side so you can hold it without the banana slime getting all over your hands. You use the knife to cut straight down the middle and then place the bananas on a plate. Those banana splits are probably one of my favorite things to make so of course, I had to craft up a healthier version. Grandpa, you’d approve too!
A traditional banana split is three dollops of ice cream each topped with pineapple, chocolate and strawberries. A little sprinkling of whipped cream and nuts adds that extra zing. I opted for some almond butter as my ice cream, mulberries in place of the pineapple (they’re still yellow), cacao nibs for the chocolate, goji berries in place of strawberries. I used chia seeds as my “nuts.” This delectable treat is sure to get your taste buds rocking. My sister Grace was craving something sweet so I whipped one up for her. Ingredients
1 banana
1 Tablespoon almond butter (or any other nut butter)
1 Tablespoon mulberries

Directions
- Slice the banana in half. Use the trick above for best results!
- Spread 1 Tablespoon almond butter on the banana slices.
- Sprinkle with toppings.
