What a Watermelon Salad?


imageTell me a better dish than a fresh, juicy salad. This watermelon salad is mouth watering and perfect for a summer night! Watermelon contains lycopene, which is good for cardiovascular health and bone health. One single cup of watermelon contains more lycopene than a cup of tomatoes. It also helps with the airway spasm occurring in asthma, reduces colon cancer, and alleviates some symptoms associated with rheumatoid arthritis and osteoarthritis. Watermelon were first cultivated in Egypt. The fruit was placed in tombs of multiple Egyptian kings because it was a fruit held high in regard.

So we decided to jazz this watermelon up with a little cucumber, mint, and red onion! It was perfect for a 4th of July side dish. Check out the recipe below:

Serves: 6-8

Total time: 15 minutes


½ large watermelon, sliced into squares

2 cucumbers, diced into squares

1 red onion, chopped

6 oz. feta cheese
2 tbsp white balsamic vinegar
1 oz. mint, minced


  1. Chop watermelon and cucumbers into small squares. Dice the onion.
  2. Place watermelon, cucumber, and red onion into a bowl.
  3. Sprinkle feta cheese and cut mint over salad.
  4. Drizzle with white balsamic vinegar.
  5. Enjoy!
