White Bean, Kale Tuscan Soup

IMG_5706The farmer’s market it one of my favorite places in the world. I just discovered they had dried beans at the Green City Market that I usually go to in Lincoln Park. The woman at Three Sisters Garden told me the beans you usually buy at the store are about 3-5 years old. Their beans are extremely fresh. It is important to soak the beans overnight because it aids in digestion. One of my goals is to try new foods that I haven’t purchased at the market and whip something up. So here is your go to white bean, kale Tuscan soup!


Serves: 4-6

Hands-on time: 20 minutes

Total Time: 35 minutes


Gluten free, vegan, vegetarian, dairy free, soy free


Ingredients

2 tablespoons extra virgin olive oil

1 medium yellow onion, diced

2 stalks organic celery, diced

½ bunch asparagus, diced

4 cloves garlic, pressed

¼ teaspoon cayenne pepper

¼ teaspoon dried thyme

½ teaspoon dried rosemary

1 quart vegetable (or chicken) broth

2 (14 ounce) cans cannellini (white) beans, drained and rinsed. You can also purchase dried beans. You must soak them overnight, bring water to a boil (enough water to cover the beans) and cook them for 1-2 hours.

1 (14 ounce) can organic diced tomatoes with juices

3 cups chopped organic kale, ribs removed

2 teaspoons salt

1 teaspoon freshly ground black pepper

1 tablespoon white wine vinegar


Directions

  1. Soak beans overnight in a bowl of water if you are using dried beans.
  2. Peel garlic and let it sit for 5 minutes. Here’s why.
  3. Heat 2 tablespoons of olive oil in a large soup pot over medium-high heat. Add onions, asparagus, and celery. Sauté for 4 minutes.
  4. Add the garlic, cayenne pepper, thyme and rosemary. Cook for 30 seconds.
  5. Stir in the broth, beans, and tomatoes. Bring the contents to a boil then turn the heat down to low.
  6. Add chopped kale, cover the pot and let simmer for 15 minutes.
  7. Use an immersion blender to partially puree the soup, leaving some chunks of beans and veggies. You can also separate the soup into parts in a food processor and mix it this way.
  8. Serve warm.
  9. Enjoy!
